Loading...

This Asian style vegan one pot pasta is the perfect meal for busy weeknights. It’s super creamy, delicious, healthy, and insanely easy to make!

For the sauce I used a combination of red curry paste and coconut milk. So it’s a unique mixture of Thai curry and pasta! And because it’s a one pot meal, you don’t even a lot of dishes to clean up.

I absolutely LOVE pasta and I love quick and easy meals! So this Asian style vegan one pot pasta with coconut milk and red curry paste is absolutely perfect. It’s my new favorite meal for weeknight dinners. Easy, healthy, and so incredibly delicious and creamy.
